Distillation and production

Production method

Production based on pur jus de canne (fresh cane juice): cane is hand-harvested, pressed on a three-roll mill and generally pressed only once. Fermentation takes place in temperature-controlled tanks over long periods to develop aromatic potential; distillation is carried out in Charente-style copper pot stills equipped with a 7-plate column ('La Belle Aline') and also in hybrid stills (Charentais + creole column) for some cuvées; tuns ex-Cognac are used for blending and resting, followed by barrel passages for certain releases.

Distillation

Distillation in a Charente-style copper pot still with a 7-plate column ('La Belle Aline'); use of hybrid Charentais/column stills for some cuvées; a distillation strategy aimed at highlighting the vin de canne with long fermentations and thermal control.

Ageing

Selection and blending in tuns (large-capacity containers, including ex-Cognac) to rest and oxygenate; for aged rhums, transfers and maturation in French oak barrels (e.g. 320 L) for finishing.

Producer history A 1710

The A 1710 project was initiated by Yves de Pompignan (started in 2006) with the acquisition of the Habitation du Simon. After years of work on selection and aging of spirits, authorization to open the distillery was obtained on 31 December 2015; the facility was then established in the heart of an 18th-century former sugar purgerie. In subsequent years A 1710 expanded the plant (including installation of a second still in 2023) and developed ranges of white rhums, aged releases and organic cuvées.

Production philosophy

Four pillars guide A 1710: beauty (of the island and the terroir), creativity, authenticity and quality. The company focuses on controlled supply chains, small-scale production, territorial valorization and sustainable agricultural practices (certified organic lines). It also offers direct experiences (guided visits, workshops, production residencies).
