Distillation and production

Production method

The Maison selects, ages and blends eaux-de-vie sourced from producers in Grande Champagne; for certain bottlings it also uses transfer into dame-jeannes to preserve older expressions. Work takes place in dedicated cellars and stock management is supervised by the Maîtres de Chai.

Distillation

Double distillation in a charentais pot still (copper) — standard procedure for Cognac production.

Ageing

Long maturation in French oak casks (extended ageing of decades for many expressions); for some historic blends the eaux-de-vie are transferred into dame-jeannes to preserve their expression over time.

Producer history Cognac Delamain

Officially founded in 1824 and managed for generations by the Delamain family, the Maison built its reputation by selecting and preserving very old eaux-de-vie from Grande Champagne. In recent decades it has expanded collections of millésimes and limited releases; since 2017 the Bollinger group has been among its principal shareholders.

Production philosophy

Pursuit of purity and terroir expression: exclusive selection of Grande Champagne eaux-de-vie, long maturation, limited handling and careful selection and blending to reveal elegance, finesse and aromatic depth.

Territory

Grande Champagne (Cognac region), with headquarters and chais in Jarnac, department of Charente, Nouvelle-Aquitaine, France.
