Distillation and production

Production method

Grapes are harvested and pressed, the must ferments for several days to become a base wine; distillation is double, carried out in small discontinuous stills (about 25 hectolitres according to the Maison). For many crus distillation is performed on the lees; from distillation the central fraction (the "heart") is selected to obtain the eaux-de-vie which are then matured in casks. The final blend is produced by the Maison's master blenders.

Distillation

Double distillation in small discontinuous pot stills (~25 hectolitres); for some crus distillation is carried out on the lees; the 'heart' of the distillation is selected for ageing.

Ageing

Maturation in proprietary French oak casks, with cellar management for long ageing of the eaux-de-vie; different expressions require different ageing periods (for example VSOP up to about 12 years, XO with eaux-de-vie often selected between 11 and 25 years).

Producer history Courvoisier

The Maison was established in Jarnac in 1828 and its history is connected to multiple families and the towns of Jarnac, Paris and London. During the 19th century it received distinctions and royal clients (including the appointment as official supplier to the imperial court of Napoléon III). In the 20th century the Maison changed ownership several times and expanded its global presence; a recent event includes the announced transfer to Gruppo Campari (2023/2024). The historic headquarters (the Château) houses offices, visitor facilities and aging warehouses.

Production philosophy

The Maison states a philosophy called "Cognac in Blossom": the aim is to enhance the aromas and vitality of the crus by combining respect for the terroir, artisanal care and an elegant, refined tasting style. Courvoisier also emphasizes commitments to sustainability and relationships with local vignerons.

Territory

Headquartered in Jarnac, department of the Charente (Cognac region). The Maison uses eaux-de-vie primarily from crus such as Grande Champagne, Petite Champagne, Borderies and Fins Bois. Main facilities and warehouses include sites near La Belloire and production locations in the area (including a distillery at Châteauneuf-sur-Charente and the Domaine Guilloteau).

Awards and recognitions

Numerous medals at international competitions (examples reported by the Maison: China Wine & Spirits Awards Double Gold 2021; Cognac Masters Gold 2021; Critics Challenge Platinum/Gold 2021).
