Distillation and production

Production method

Production based on local molasses; distillation carried out with different types of equipment (traditional wooden pot stills and Coffey columns together with more modern column stills) to achieve varied styles. El Dorado expressions are created by blending aged stocks from different stills and vintages, followed by finishing in oak barrels.

Distillation

Combined use of pot stills (including traditional wooden pot stills) and Coffey columns (including a historic wooden Coffey unit), as well as modern continuous column stills; production targets both high-ester distillates and lighter spirits to allow diverse blending options.

Producer history Demerara Distillers

Distillation in the Demerara region dates back to the 17th century. The current company was formed by merging local entities: Guyana Distilleries Limited and Diamond Liquors Limited merged to create Demerara Distillers Limited (DDL) in 1983. In subsequent years the company concentrated production at the Diamond Distillery, preserving and bringing together historic stills from several plantations (including Port Mourant, Enmore, Uitvlugt) and launching the El Dorado range as a premium aged rum line from the 1990s onward.

Blends and aging designed to enhance the aromatic character of Demerara rum: a balance between tradition (use and conservation of historic stills) and modern, sustainable production practices.
