Distillation and production

Production method

Starting from a neutral alcohol, a cider distillate obtained from more than 30 apple varieties is used. The apples are grated, pressed and the must ferments during winter; the cider distillate is then double-distilled in small copper pot stills. Each botanical is macerated and redistilled separately; the resulting distillates are blended shortly before bottling.

Ageing

For the 'Calvados Cask Finish' version, maturation in ex‑Calvados barrels (225 L) for about 1 year; other expressions are generally unaged.

The gin was developed within the Drouin family, known for Calvados production. The initial version was launched in 2015 as an extension of the Maison; the project is led by Guillaume Drouin and draws on the house's century-long experience in processing cider apples and aging spirits.
