Production method

Main liqueurs are produced by infusion and maceration: Bargnolino is obtained by cold infusion of wild prunus (sloe) berries; Nocino is made from selected green walnut husks (malli di noce) and left to macerate for months. Some Nocino editions are then finished in rum casks.

Ageing

Maceration in alcohol for Nocino (minimum indication of 10 months for Nocino); some variants undergo further ageing in rum casks.

Founded as a Nocino producer, Il Mallo has operated since 1984 in Maranello (MO). Production developed around family recipes and Emilian tradition, gradually expanding the range with Nocino variants (Raccolto/RS editions and rum cask finishes), Bargnolino and other typical regional liqueurs.

Production philosophy

Aiming for balance between tradition and innovation, using selected raw materials and artisanal care in the processes (resting, maceration and ageing) to highlight the aromas and flavours of the Emilia territory.
