Distillation and production

Production method

Small-scale production in discontinuous copper stills; for grappa steam distillation is used on charges of about 400 kg of pomace per boiler, with slow collection of the distillate (separation of heads, heart and tails). A vacuum water-bath still is also used for lower-temperature distillations to better preserve aromas. Distillates are stored in hermetic containers for stabilization.

Ageing

Some grappas are aged in barrique (barrique-matured grappas available in multiple types); other distillates are kept in hermetic containers for stabilization.

Producer history La Valdotaine

Founded in 1947 in Verrès for grappa production, La Valdôtaine moved in 1978 to its current facility in Saint-Marcel. Over time it expanded production to include genepì, amari, vermouth, alpine gin and grain-based distillates (including the Eyva farro vodka), maintaining traditional methods and small-scale artisanal production.
