Production method

Viticulture and winemaking by variety (mainly Ugni Blanc, with replantings of Folle Blanche and Montils). Mechanical harvest carried out in stages; varieties are vinified and distilled separately. Traditional wood‑fired distillation in copper stills (the maison reports using two stills dated 1901 and 1936), with separation of brouillis, heads, heart and tails. The eaux-de-vie are aged in French Limousin oak casks and subsequently assembled.
