Distillation and production

Production method

Maceration of botanicals in alcohol (French molasses alcohol is indicated) for about 36 hours, traditional small-batch distillation and subsequent resting of the distillate in earthenware containers for several months before bottling. Some expressions (e.g. Barrel Cut) include maturation in selected wooden casks.

Small-batch production: maceration of botanicals for ~36 hours, traditional distillation and subsequent refinement of the distillate; unfiltered bottling into dark glass bottles numbered by batch.

Ageing

For the base gin: the distillate rests in earthenware containers for about three months before dilution and bottling. For the Barrel Cut: maturation in new, lightly toasted 110 L mulberry barrels.

Producer history Monkey 47

The brand idea is inspired by the story of Montgomery Collins, a former RAF officer who created a gin in the Black Forest in the 1950s. The recipe was revived and developed by Alexander Stein in collaboration with master distiller Christoph Keller; the project began around 2010 at the Stählemühle and production is now based in Loßburg. In January 2016 Pernod Ricard acquired a majority stake in the producing company, Black Forest Distillers.
