Produced as a Canadian whisky from a base primarily of corn with rye components, assembled and matured in oak casks; some expressions include a period of finishing in specific casks (port, rum, sherry/oloroso, etc.). Production and aging take place at Hiram Walker & Sons in Windsor, Ontario.

The Pike Creek brand was launched in the 1990s as part of Corby's Canadian whisky collection. After an initial commercial phase and a temporary discontinuation, the brand was relaunched and positioned within Corby/Pernod Ricard's premium initiatives. In recent years Pike Creek has been the subject of reissues and special releases (including long-aged expressions and distinctive finishes) as part of the range managed by Corby and produced at the Hiram Walker & Sons facility in Windsor, Ontario.
