Distillation and production

Distillation and production

Production method

Primarily artisanal production: distillation in discontinuous water-bath stills (traditional copper boilers for grappa) and small-batch processes; for some references (e.g. Marconi gin) a vacuum water-bath still called Crysopea is used.

Distillation

Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.

Ageing

Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.

Producer history Poli Distillerie

Poli Distillerie was founded in 1898 in Schiavon (Vicenza) when Giobatta Poli began distilling. The company has remained family-run for generations and developed a dual focus: artisanal production of spirits and the promotion of grappa culture through the Poli Grappa Museum, with sites in Bassano del Grappa and Schiavon. Over time the range was expanded to include gin, whisky, liqueurs and vermouth while preserving traditional methods alongside production innovations.

Production philosophy

Combine artisanal tradition and territorial care with targeted experimentation: enhance the culture of grappa and Veneto distillates, produce in small batches and disseminate knowledge about the spirit through the company museum.

Territory

Production site and distillery: Schiavon (Via Marconi), province of Vicenza. Grappa Museum and showroom in Bassano del Grappa (Ponte Vecchio). Activities and raw materials are linked to the Venetian foothills and surrounding wine areas (Bassano, Marostica, Breganze).
