Production method

Produced according to traditional sake methods: use of selected sake rice (including Yamada Nishiki and Tamasa kae), local spring water (the 'Kabata' area around Lake Biwa) and classic fermentation practices to express Junmai, Ginjo and Daiginjo profiles. The brewery provides public information on water, rice varieties and the role of the toji (master brewer).

Producer history Sake Kawashima

Founded in 1865, Kawashima Shuzou has produced the 'Matsu no Hana' brand from its site in the Takashima area on the springs of Lake Biwa. The brand name comes from an old pine that was felled when the brewery was built; over its history the company has expanded activities, including launching the Lake Biwa Distillery project with the aim of producing whisky.

Production focuses on achieving an authentic, natural taste: careful attention to the quality of water and rice, dedication to traditional fermentation techniques, and a vision that considers consumer health and the protection of the local territory.
