Production method

Floor malting, relatively long fermentation (about 4 days), double distillation in small flame‑heated copper pot stills, predominant use of local barley and rye; maturation in wooden casks with experiments on different cask finishes.

Producer history Stauning

Born as a project of nine friends in 2005 in an old slaughterhouse in the village of Stauning (West Coast of Denmark), commercial production began in 2011. To meet growing demand, a purpose-built modern distillery was opened near the original site in 2018 while retaining artisanal practices such as floor malting and direct-fire distillation.

Production philosophy

Local, traceable production: use cereals grown within a few kilometres of the site, recover traditional techniques (floor malting, direct fire) and experiment with finishes in different casks to express the territorial character of the Danish West Coast.
