Distillation and production

Production method

Production starts from locally malted barley converted into a base beer (wash) using ale yeast and low-temperature fermentation; the wash is then distilled in-house and the spirit matured in new American oak and in finishing casks (wine, stout, etc.).

Distillation

Double distillation in custom low-reflux pot stills.

Ageing

Maturation primarily in new American oak barrels with subsequent finishes in Willamette Valley Pinot Noir wine casks, stout-seasoned barrels from local breweries and other experimental casks (French acacia, smoked casks in selected expressions).

Producer history Westward

Westward began as a project connected to House Spirits Distillery and developed into a line dedicated to American single malt produced in Portland, Oregon. The brand is known for adapting brewing practices (slow fermentations with ale yeast and locally malted barley) to whiskey production and for its expressions finished in local Pinot Noir wine casks and barrels seasoned with stout. Information on the brand’s origins and development is reported by the producer and specialist publications.

Production philosophy

To express the character of the Pacific Northwest through an American single malt: local ingredients, slow fermentations inspired by craft beer, and processes focused on malt flavor rather than neutrality. Collaboration with local winemakers and breweries for finishes and barrel exchanges.

Territory

Portland, Oregon; Pacific Northwest (United States)

Awards and recognitions

Westward Cask Strength: Double Gold, San Francisco World Spirits Competition (noted for the cask strength release); Westward Cask Strength ranked among Whisky Advocate's Top 20 Whiskies in 2022 (ranked #5, Top 20 edition).
