The Barolo DOCG 1961 from Fontanafredda is an older bottle that requires a cautious approach: the vintage and advanced age imply significant variability depending on storage conditions. In the glass it may show a garnet color with orange highlights and a bouquet where primary notes have faded in favor of tertiary profiles; depending on the bottle's history, aromas of tobacco, leather, dried mushrooms, sweet spices and very ripe fruit may emerge, with variable intensity and clarity. Each tasting is conditioned by ullage, the seal's condition and the cellar history in which the bottle was stored.

To enjoy it best, open the bottle carefully, check for any sediment and consider a light decanting or pouring into a glass to separate deposits; serve at a moderate temperature, around 16–18 °C. This Barolo is best approached with small pours and pairings that do not overpower the evolved complexity, such as braised meats, mushroom dishes or aged cheeses; however, given its age, the safest option may be to consume it shortly after opening if conditions allow. Always verify the bottle's integrity before purchase or service.

Winery history
The estate made history in the 19th century: purchased by Vittorio Emanuele II in 1858 and associated with Rosa Vercellana, the property was developed by the Mirafiore family and had already established its commercial reputation by the late 1800s. In the 20th century the Fontanafredda brand consolidated as a reference producer in the Langhe; after hardships related to crises and wars, the company regained momentum and, in 2008, was relaunched under new ownership led by Oscar Farinetti. In recent years Fontanafredda has undertaken a program of technical renewal and sustainability known as “Rinascimento Verde,” publishing sustainability reports and holding certifications as reported by the producer.
Production philosophy
Local production focused on quality, the protection of the vineyard landscape and sustainability. Fontanafredda coordinates a network of suppliers to operate across a wide area while maintaining a strong focus on conversion to organic farming, biodiversity and the transmission of agricultural practices between generations, with a significant investment in storytelling and the local community.
Terroir and vineyards
Located in Serralunga d'Alba, in the heart of the Langhe, the estate manages vineyards in several municipalities of the Langhe and lower Piedmont at varying altitudes. The area is characterized by limestone hills and the typical continental climate of the Langhe.
Awards and recognitions
