The Pecorino Falerio DOC Biologico by Saladini Pilastri is born in the Marchigian hills, the heart of a territory dedicated to quality viticulture, where the mineral content of the calcareous-sandy soil gives the Pecorino grape a distinct freshness and structure. This organic wine expresses the typicality of the native grape variety, with an aromatic bouquet that opens with notes of white-fleshed fruit, white flowers, and a delicate citrus nuance. On the palate, it is balanced and savory, with good persistence and a vibrant finish that invites sip after sip.

The aging takes place in steel to preserve its liveliness and aromatic purity, enhancing the natural elegance of the Pecorino. Winery history
The Saladini Pilastri family is a noble family from Ascoli Piceno with deep historical roots. The estate's winemaking activity has been documented for several centuries. In recent decades the estate has renewed its vineyards and production facilities while remaining firmly rooted in the local tradition.
Production philosophy
