Le uve vengono interamente raccolte a mano, a perfetta maturazione e nelle ore più fresche del mattino. In breve tempo giungono in cantina, dove viene fatta una pressatura soffice delle uve intere. Il mosto fiore così ottenuto, dopo un primo travaso, viene collocato nelle vasche di fermentazione a temperatura controllata. Il vino rimane quindi sulle sue fecce fini per almeno 10 mesi e poi imbottigliato dopo 9 mesi dalla vendemmia.

Colore giallo paglierino dai riflessi verdognoli, con profumi molto intensi e delicati che ricordano la pesca a pasta bianca, il sambuco, il pompelmo, la frutta esotica. Vino caratterizzato dal grande corpo, ma nello stesso tempo elegante e e vellutato. Si adatta perfettamente a lunghi invecchiamenti.

Adatto per antipasti, risotti con erbe aromatiche come lo scolpit e i bruscandoli, primi piatti dal gusto deciso e aromatico, i piatti complessi e ricchi a base di pesce, i crostacei in preparazioni saporite, il baccalà.
