The Spumante Alta langa DOCG Brut Totocorde - Cocchi is born in the hilly Piedmont area designated as Alta Langa, a zone famous for its vineyards located at high altitude, which give freshness and complexity to the grapes. It is a Blanc de Noirs obtained mainly from Pinot Nero, vinified according to the classic method, with a long and careful refermentation in the bottle that enhances the elegance and finesse of the bubbles. The long ageing on the lees gives the Totocorde refined aromas of yeast, bread crust, and light notes of fresh white fruit such as apple and pear, accompanied by delicate floral hints. On the palate it is balanced and structured, with good acidity and a persistent finish that invites the next sip. Ideal to pair with seafood dishes, white meats, or fresh cheeses, it expresses the unique character of a dedicated territory and a noble grape variety shaped by the Cocchi tradition.
