Vollì Brut IGT presents itself with a pale straw color and fine bubbles: the first impression is inviting without being intrusive. On the nose white-fleshed fruit and ripe citrus emerge, accompanied by light hints of wildflowers and a subtle brioche note; on the palate freshness and sapidity drive a lean, balanced and smooth sip. The taste structure balances freshness with a modest body, making it approachable but not banal; it proves nimble on the palate and ready to drink. The finish is linear, slightly citrusy, with a persistence that invites the next glass.

It is a versatile sparkling wine, ideal as an aperitif but capable of standing up to seafood starters, shellfish, sushi and fresh cheeses; it also pairs well with light fried dishes, rice-based dishes and vegetable preparations. Serve very cold, around 6-8°C, to enhance its liveliness and aromatic clarity; it retains its freshness to the last sip, making it perfect for convivial moments and for those seeking a wine that is immediate yet pleasantly characterful.

Winery history
Founded in 1883 in Soave by the Bolla family, the winery expanded over the following decades, extending production from Soave white wines to the great reds of Valpolicella. Over time the brand has become an international reference for wines from Veneto. The winery joined Gruppo Italiano Vini in the 2000s.
Production philosophy

Terroir and vineyards
