In the heart of Salento, the Paolo Leo family perpetuates a winemaking tradition that blends innovation with respect for the land. The Spumante Negroamaro Bianco Brut "Rosarose Blanc" represents one of the house's excellences, combining the typicality of Negroamaro in an exceptional white brut sparkling wine.

"Rosarose Blanc" is crafted through a meticulous winemaking method that begins with nighttime grape harvesting to preserve their freshness. This is followed by a gentle pressing and controlled temperature fermentation, culminating in maturation in stainless steel tanks that preserve the varietal characteristics. The final phase involves a secondary fermentation in an autoclave using the long Charmat Method, which enhances the wine's aromatic complexity.

Visually, it presents with a fine and persistent perlage, while the color is a light straw yellow with greenish reflections. On the nose, the sparkling wine bursts with aromas of white flowers, citrus, and hints of white-fleshed fruits like peach and pear. The taste confirms this aromatic freshness, supported by lively acidity and a balanced structure that leaves the palate pleasantly clean.

Winery history
The company known as Paolo Leo stems from the experience of several generations of Salento winegrowers and, in its current form, began with the bottling activity led by Paolo Leo in the late 1980s. The business has grown by supplementing its historic premises in San Donaci with a second winery inaugurated in 2020 in Monteparano, near the Primitivo di Manduria area.
Production philosophy
Enhancing the Salento region through the cultivation and winemaking of native grape varieties, adopting practices focused on environmental and economic sustainability. The estate produces both conventional lines and an organic-certified range, publishes sustainability reports and has obtained environmental responsibility certifications.
