Inspired by the ancient world and ancestral methods of winemaking, it is a sparkling white obtained thanks to the final alcoholic fermentation directly in the bottle. This method has very ancient origins and was generally used in the Champagne area; the wine obtained obtained a greater unique organoleptic complexity.

The Ancestral method is an ancient method, it consists of a light pressing of the grapes necessary for the extraction of the indigenous yeasts present in the peel of the bunches, followed by fermentation in stainless steel at controlled temperatures.

At this point, the fermentation is blocked at a precise sugar content, necessary to guarantee the recovery of the same after bottling where the final part of the fermentation takes place, without adding yeasts or sugars. giving the wine a presence of yeasts on the bottom that make the wine cloudy.

The varietal aromas of the red berried grapes marry peacefully with those of the yeasts. The deposit on the bottom is a completely natural aspect, the turbid aspect of the wine is given precisely to its particular production technique.

The Cellar


Rocca Le Caminate is located in Meldola (Provincia FC) and has been producing quality wines for decades thanks to its completely underground cellar, designed to house the entire wine production process.
Fermentation takes place in large stainless steel tanks at optimal and always controlled temperatures.
The batches with certain characteristics are left to age in French oak barrels. Before bottling, a mild filtering is carried out which allows to remove any small impurities.
Here Sangiovese, a vine that finds one of its highest expressions in this area, gives rise to wines that enchant those who let themselves be seduced. The wines that are produced, once poured into glasses, make us imagine the charm of the territory of which the sun, the soil and the man who cultivates it are the founding elements.

Winery history
The Rocca le Caminate estate was established with the aim of showcasing the Sangiovese grown in the Vitignano area. The estate’s official page states it was founded in 2000 and describes its location in the Romagna region at approximately 250 m above sea level, along the road leading to the Rocca delle Caminate.
