Lavacchio Farm, renowned for its dedication to organic farming, presents us with the Cedro Chianti Rufina DOCG BIO, an excellent example of the nobility of Sangiovese grown in the Chianti Rufina hills. This wine is a perfect blend of Tuscan tradition and modern sustainable viticulture techniques, ensuring not only a high-quality beverage but also environmental respect.

The Cedro Chianti Rufina DOCG BIO is distinguished by its intense ruby red color, with hues that shift to garnet as it ages. On the nose, it opens with vigorous aromas of wild berries, such as cherries and blackberries, enhanced by delicate notes of violet and light spices, including a soft touch of vanilla. The olfactory complexity is supported by an undeniable freshness and elegant minerality, typical of the Rufina terroir.

On the palate, the wine is structured and well-balanced. The acidity is lively yet harmonious, working in perfect synergy with the soft but persistent tannins. The fruit is ripe and well-defined, leading to a long and pleasantly spiced finish.

This Chianti Rufina is ideal for pairing with robust dishes of Italian cuisine, such as braised meats, Florentine steak, or dishes based on mushrooms and truffles. It is also an excellent choice for sampling medium-intensity aged cheeses.

Recommended for those who want to explore a Chianti Rufina that not only respects the land from which it comes but also enhances the purity and intensity of Sangiovese. The Cedro Chianti Rufina DOCG BIO from Fattoria Lavacchio is a true testament to the beauty and richness that an organic wine can offer.

In the 19th century it passed to noble families and, after a period of abandonment, was restored and relaunched under the modern management of the Lottero family beginning in the 1970s. The farm’s history is often associated with the large cedar in the park, a symbol of the property.

Terroir and vineyards
The estate stands atop the hill of Montefiesole, about 450 metres above sea level and a short distance from Florence. The landscape features vineyards, olive groves and agriturismo facilities, and the park is home to a centuries-old cedar.
