The Albana grapes are harvested in many passages from the end of October to December. The bunches are dried on the plant with Botrytis Cinerea, a third part after cutting the branches and one in boxes. The vineyards are grown on clayey-sandy soils, at an altitude of 150/200 m above sea level, with the guyot system. The production process begins with alcoholic fermentation at a controlled temperature with indigenous yeasts, partly in steel and partly in wood; followed by aging for 2 years, always in steel and in French oak barriques, and a further 18 months in the bottle.
It appears with an intense golden yellow colour, rather amber after ageing. The olfactory profile denotes sweet hints of honey, apricot jam and dates, to which notes of dried figs and ripe apple are added, a pinch of vanilla and a hint of spice. With aging, aromas of saffron are combined, the typical scent of botrytised grapes. The sip is rich and persistent, with medium tannins.
A structured wine, suitable for prolonged ageing. It is recommended to combine it with blue, seasoned and semi-seasoned cheeses, accompanied by jams and honey; it is also excellent with dry pastries.
