The Valpolicella Superiore Ripasso DOC "Catullo" by Bertani is a red wine that celebrates the elegance and winemaking tradition of the Verona area. Mainly produced from Corvina grapes, complemented by smaller percentages of Rondinella and Molinara, this wine features a rich and lingering aromatic profile.

The "Ripasso" technique is crucial in this winemaking process, as the wine is re-fermented on the pomace of the prestigious Amarone, thus gaining greater body and complexity. This process endows the Valpolicella Ripasso with a more robust structure and intensified aromas, which are also common in higher category wines.

Visually, the "Catullo" stands out for its deep ruby red color with garnet reflections. On the nose, it offers a complex bouquet where intertwined notes of ripe cherry, plum, sweet spices, and a slight hint of tobacco and chocolate. The taste is enveloping, with a perfect balance between acidity and soft tannins. The aromatic persistence denotes a pleasantly long finish that brings back flavors of red fruit and hints of spices.

Best served at a temperature of 16-18°C, the Valpolicella Superiore Ripasso "Catullo" pairs beautifully with rich red meat dishes, game, and aged cheeses. It is also an excellent companion for convivial evenings, offering a taste experience that remains memorable.

Aging in oak barrels for about 18 months further enriches its complexity, making this wine an intriguing option for connoisseurs and a magnificent example of how winemaking tradition can be beautifully expressed through innovative techniques and attention to detail.
