Wine of first pressing obtained with mechanical presses with a light pressure. Pumping is avoided by decanting only by gravity in order to avoid oxidation, as is the case with every Champagne from Maison Drappier.

Very low use of sulfur dioxide, natural decanting and alcoholic fermentation for about two weeks at low temperature. There is no filtration.

The wine thus obtained is aged in steel to maintain maximum freshness, and then passed into the bottle and aged for 3 years.

The disgorgement date is indicated on each label. Dosage: 0 g/l

With bright and coppery colors, it has beautiful aromas of wild berries and fish, while in the mouth it is very pleasant to taste, with small sips it is possible to grasp the flavors of honey, toasted bread and black currants.
