The Piemonte DOC Spumante Pinot Noir Classic Method by Castello di Neive is a wine that celebrates with elegance and refinement the ability of Pinot Noir to express itself brilliantly also as a sparkling wine, through the ancient and respected classic method. This winery, located in the historic Piedmont region, is renowned for its dedication to quality and expression of terroir, producing wines that reflect the authenticity and richness of this fertile land.

The choice to use Pinot Noir, a noble and versatile grape variety, for the production of a classic method sparkling wine testifies to the innovation and respect for the traditions of Castello di Neive. This sparkling wine is the result of a careful selection of the best grapes, followed by fermentation in the bottle as required by the classic method, which also includes a period of aging on the yeasts to enrich the wine with complexity and creaminess.

At sight, the Piemonte DOC Spumante Pinot Nero Metodo Classico stands out for its straw yellow color with golden reflections, while the fine and persistent perlage underlines its elegance and quality. On the nose, it offers an intriguing and complex aromatic bouquet, with notes of fresh fruit such as green apple and lemon, accents of white flowers and a light nuance of toasted bread and dried fruit, the result of aging on the yeasts.

In the mouth, the wine is vibrant and fresh, with a well-balanced acidity that gives liveliness and a pleasant persistence. The fruity and floral notes blend harmoniously with the creaminess of the perlage, creating a perfect balance between structure and lightness. The finish is long and clean, with a light minerality that invites another sip.

Ideal as an aperitif or paired with delicate dishes such as seafood appetizers, sushi and sashimi, or even with fresh cheeses and vegetable dishes, the Piemonte DOC Spumante Pinot Nero Metodo Classico by Castello di Neive is an expression of celebration and refinement , capable of adding a touch of elegance to any occasion.

With this sparkling wine, Castello di Neive underlines its ability to interpret classic varieties in new and surprising ways, offering wine lovers a unique experience that combines the Piedmontese winemaking tradition with the art of classic method sparkling wine.

Winery history
The estate is housed in an 18th-century noble palace. The Stupino family began modern operations in the 1960s and has owned the Castello since 1964; over time it has reorganized historic vineyards and renovated the cellars. Among the most frequently mentioned company developments are the enhancement of the Santo Stefano vineyard and the opening, in 2016, of “La Casetta del Castello” as a space for tours and tastings.
