Vinification begins with a careful selection of grapes, followed by gentle pressing. The Passerina grapes are fermented at controlled temperatures to preserve all their natural aromas. This is followed by the sparkling process using the Metodo Charmat, which involves a second fermentation in large closed containers to maintain the finesse of the bubbles and the integrity of the aroma.

The color of this wine is delicately straw-yellow with greenish reflections. On the nose, it opens with intensity, offering fragrances of white flowers, green apple, and a fine touch of citrus.
