First pressing wine obtained with soft pressing through mechanically regulated presses. Pumping is avoided by decanting only by gravity in order to avoid oxidation. Very low use of sulfur dioxide (less than 30 mg/l). Natural decantation and an alcoholic fermentation lasts about two weeks at low temperature. The malolactic fermentation following the natural fermentation, as for every Champagne of the Maison, is done naturally and completely.
The result thus obtained is assembled for 50% of the wine aged in oak barrels for a year and after bottling it is aged for 5 years in the bottle.
Excellent Champagne, it accompanies in a unique way both with cooking dishes and to toast a beautiful event.
