Cervaro della Sala Bianco Umbria IGT - Castello Della Sala is a white wine of great elegance and complexity, a fine expression of the Umbrian territory. The result of a careful selection of Chardonnay grapes and a small percentage of Grechetto, this wine captivates with the perfect balance between structure and freshness. The aging takes place in French oak barriques, which give the wine depth and aromatic refinement without overpowering its natural fruity liveliness. On the nose, there are hints of white flowers, exotic fruit, and delicate mineral notes, while the palate is enveloping, with a pleasant creaminess and a long persistence. Perfect to accompany fish, shellfish, or white meats, Cervaro della Sala is a white wine capable of expressing the richness and finesse of Umbria in every sip. An excellence that also conquers the most demanding palates.

Winery history
The estate has medieval origins: the castle was built in the 14th century by the Monaldeschi della Vipera family. After changes of ownership and long periods of transformation, the estate entered the Antinori sphere in the 20th century. From the 1980s a modern winemaking project began, leading to the creation of Cervaro della Sala and the development of varietal experiments and barrique aging techniques.

The area is characterized by calcareous-clay soils rich in fossils, well-exposed vineyards and significant diurnal temperature variations; the estate's vineyards are situated between 220 and 470 meters above sea level.
