The Ancestral Refermented Pignoletto by Pinus Laetus, DOCG produced by La Riva winery, is a refined gem for lovers of natural sparkling wines. This elegant sparkling white wine is made using the ancestral method, an ancient fermentation technique that allows the wine to ferment a second time in the bottle without the addition of external yeasts or sugars. This process gives the Pignoletto unique characteristics and a distinctly fresh and vibrant taste.

Visually, the Ancestral Refermented Pignoletto sports a straw yellow color with greenish reflections, bright and inviting. On the nose, it features seductive fruity notes of green apple, pear, and a slight hint of citrus that blend harmoniously with floral nuances and a hint of fresh bread, thanks to the refermentation in the bottle.

On the palate, the wine expresses itself with a lively and persistent freshness. The delicate effervescence and the balance between acidity and fruitiness make each sip pleasantly harmonious. The aromas reaffirm the olfactory sensations, adding a slight mineral complexity that completes the tasting experience.

This wine is ideal for pairing with appetizers, light dishes based on fish or vegetables, and establishes an excellent dialogue with fresh cheeses and dishes from the Italian regional cuisine. It is perfect for celebrating special occasions or for elevating a casual moment with a touch of unconventional elegance.

The Ancestral Refermented Pignoletto by La Riva is an authentic expression of the Emilian territory, an exemplary choice for those wishing to explore the complexity and purity of natural wines.

Winery history
Tenuta La Riva was founded as a family project, driven by Alberto's passion and the tradition of several generations. The estate has grown steadily, focusing on bottle refermentation and the promotion of local grape varieties such as Pignoletto and Trebbiano Modenese, with the family involved in every stage from vineyard to cellar.
Production philosophy
The winery favors refermentation in bottle and a low-intervention winemaking approach: organic farming, low use of sulfites and techniques that respect the land and health. For sparkling wines they practice long periods of lees contact and perform disgorgements à la volée for low- or no-dosage wines.
Terroir and vineyards
The estate, located in the Colli Bolognesi at Castello di Serravalle, is surrounded by the characteristic calanchi of the Emilian Apennines and lies about half an hour from Bologna. It cultivates indigenous and international grape varieties suited to the hilly terrain.
