The lineage cited on the maison’s website dates back to the marriage of Nicolas Le Cacheur and Françoise Remy in 1696, and the family has come to span twelve generations. In recent decades leadership passed through members such as Pierre Cheval, and today it is led by Louis Cheval.
Production philosophy
Rigorous grape-selection practices, small-batch vinifications, and traditional cellar vinification and aging. The approach prioritizes fidelity to the terroir of Aÿ and artisanal techniques such as pressing with a vertical press and manual riddling.
Terroir and vineyards
Vineyards located in the commune of Aÿ. The estate's description lists the vineyards and the individual crus/parcels that comprise its production; the style reflects the expression of Aÿ Pinot Noir balanced by Chardonnay.
