Produced with a selected cuvée of Chardonnay and Pinot Nero from the finest vineyards of the Monte Rossa estate, this Franciacorta Rosè undergoes a rigorous vinification process. The second fermentation takes place in the bottle according to the traditional method of the Franciacorta region, followed by a maturation period on the lees exceeding 30 months, bestowing the wine with extraordinary complexity and structure.

On the nose, the Cabochon Fuoriserie Rosè N.06 offers a rich bouquet with notes of fresh red fruits, citrus nuances, and a delicate hint of toasted bread. On the palate, its elegance is immediately palpable, with persistent freshness and a perfect balance between acidity and savoriness. Winery history

The estate was established through the commitment of Paolo Rabotti and Paola Rovetta. The family's winemaking activity at Monte Rossa began in 1972. Over time the estate progressively focused its production on Franciacorta sparkling wines, developing cru and reserve selections that have contributed to its national and international visibility.

Production philosophy

The production project focuses on research, experimentation and technology to produce characterful Franciacorta: care of the crus, selective use of fermentations and attention to sustainability in the organization of the new winery.
