Elegance and refinement blend masterfully in the Cuvée L'Immuable Premier Cru Extra Brut by Brisson-Lahaye. Originating from the prestigious Champagne region in France, this sparkling wine expresses the quintessence of high-quality viticulture in a territory known for its excellence in the world of sparkling wines.

The selection of grapes comes exclusively from Premier Cru classified vineyards, thus ensuring an aromatic profile of superb integrity. The varietal composition is based on the classic Champagne blend, which emphasizes quality and harmony. The production follows the methodology of in-bottle fermentation, according to the rigorous "méthode champenoise" process, with a long maturation period on the lees that contributes to developing complexity and an unmistakable fine perlage.

Cuvée L’Immuable stands out for its bright and crystalline appearance, with a fine and persistent perlage that caresses the glass. On the nose, it expresses a rich bouquet, with accents of white flowers, green apple, and lively notes of brioche bread, enriched by a light mineral hint. On the palate, this champagne reveals an elegant acidity, a medium body, and a fresh flavor palette amplified by a delicate creaminess. The finish is long and cleansing, with a closing note that evokes feelings of purity and renewal.

Ideal as an aperitif, the Brisson-Lahaye Cuvée L'Immuable pairs beautifully with delicate appetizers, seafood, and fish-based dishes. It is also an excellent companion for celebrating special moments, reflecting in every sip the art of the great Champagne tradition. A true tribute to French finesse and craftsmanship in the world of high-end sparkling wines.

Brisson-Lahaye – Winery in Champagne

Discover the story and wines of Brisson-Lahaye.

A family-run Champagne house based in Tours-sur-Marne, producing a range of cuvées sourced from vineyards across multiple Champagne terroirs.
Region: Champagne
Country: Francia
Grapes: Chardonnay, Pinot Noir, Pinot Meunier
Winery located in Tours-sur-Marne. Vineyard of approximately 4 hectares spread across multiple terroirs. Produced as Récoltants-Manipulants, harvested by hand. Winemaking by grape variety and vineyard parcel; combined use of stainless steel and oak barrels. Maturation in cellars carved into the chalk, with around two years on the lees for many cuvées.
Winery history
The Brisson-Lahaye family gradually transformed a farm into a wine estate: Eliane Brisson married Joël Lahaye in 1981, and in the 1980s the couple joined the parents' business. In the 1990s they expanded their parcels and, in 1994, left the cooperative to become Récoltants-Manipulants, carrying out all stages of winemaking on the estate. Their daughter Laure joined the business in 2004 after studying viticulture and oenology; following Joël's retirement in 2021 and Eliane's in 2023, Laure now runs the family estate alongside her partner Matthieu Foissy.
Production philosophy
The approach emphasizes terroir expression and respect for biodiversity. Harvest is done by hand; the musts are vinified separately by grape variety and by parcel. Vinification takes place primarily in stainless steel, with part of the ageing in oak barrels. Malolactic fermentation is carried out for most cuvées, and the bottles are aged on the lees in a cellar carved into the chalk.
Terroir and vineyards
The estate is based in Tours-sur-Marne. Its vineyards are spread across several terroirs of the region — including the slopes of the Montagne de Reims, the Marne Valley and the southern slopes of Épernay — enabling the use of Chardonnay, Pinot Noir and Pinot Meunier to create cuvées with varied profiles.
