Distillation and production

Production method

Production based on 100% Blue Weber Agave matured in the field, slow cooking in masonry ovens, fermentation with selected yeast strains (a strain historically linked to the founder) and double distillation in copper stills. Aged expressions rest in barrels (mainly American white oak ex-bourbon) and some variants receive finishes in European wine casks or filtration processes (e.g., the Cristalino version is charcoal-filtered after aging).

Distillation

Double distillation in copper pot stills.

Ageing

Aging in American white oak (ex-bourbon) barrels with variable durations depending on the expression (e.g., Reposado 8+ months, Añejo 18+ months, 1942 24+ months). Some bottles receive finishes in other barrel types or special processes (e.g., charcoal filtration for Cristalino, Solera system for high-end expressions).

Producer history Don Julio

The story begins in 1942 when Julio González-Frausto Estrada (known as Don Julio) started his activity in tequila production and acquired the 'La Primavera' distillery in Atotonilco El Alto, in the Highlands of Jalisco. Over time the brand expanded to an international presence in the premium and super-premium segment; ownership is now part of Diageo's global portfolio, with the group completing control of the brand in 2015.

Production philosophy

Quality, respect for the land and innovation are at the core of Don Julio's philosophy: careful selection of agaves, slow cooking, and attention to fermentation and aging stages to obtain elegant liquids suited both for mixing and for tasting neat.

Territory

Highlands (Los Altos) of Jalisco, Mexico; historic distillery and production activities in Atotonilco El Alto. Most of the agave is cultivated in the Jalisco region, characterized by volcanic soils and the typical Altos climate.
