Production method

Cooking the piñas in underground ovens lined with river stones; traditional milling with a horse-drawn tahona; natural fermentation in wooden tanks with wild yeasts; double distillation in copper stills; use of the 'venenciar' technique to determine cuts. For aged expressions, maturation in 225 L barrels is used.

Distillation

Double distillation in copper stills; first distillation to obtain the 'ordinario' and second to separate heads, heart and tails; use of the traditional 'venenciar' technique to evaluate cuts.

Ageing

For the aged labels: finished in barriques (225 L) with maturation times declared by the house (e.g. Reposado minimum 9 months, Añejo around 16 months), with batch-specific proportions between American oak and French oak.

Producer history Los Danzantes

The project's origins date to 1996; in 1997 brothers Gustavo and Jaime Muñoz, together with winemaker Hugo D'Acosta, acquired a disused palenque in Santiago Matatlán, in the heart of Oaxaca's mezcal tradition, where Destilería Los Danzantes was established. Over the years production has been organised under the supervision of master mezcaleros (including master distiller Karina Abad) and the brand expanded distribution to numerous countries.

Production philosophy

Respect for artisanal processes and local tradition: selecting and harvesting mature agave, cooking in underground ovens with river stones, grinding with a tahona, natural fermentation in wooden tinas and careful distillation with attention to cut points. The approach favors small-batch production and the transmission of traditional practices.

Production in the district of Santiago Matatlán (Valle/Tlacolula), state of Oaxaca; operational headquarters/shop in Oaxaca de Juárez. Territory strongly connected to the mezcal traditions of southern Oaxaca.
