Production is based on traditional sake fermentation techniques (rice polishing, koji preparation, fermentation and pressing) integrated with a strong use of assemblage: IWA 5 is obtained by combining multiple classes of elements — different rice varieties, multiple yeast strains, methods of moto propagation and fermentation regimes — and by reassessing the recipe year after year in an experimental process.

The IWA project, carried out under the name Shiraiwa K.K., was developed under the guidance of founder and maker Richard Geoffroy (former Chef de Cave of Dom Pérignon). The modern kura in Shiraiwa opened in spring 2021 in Shiraiwa, Tateyama (Toyama Prefecture). Several collaborators contributed to the project, including the local producer Masuda Shuzo. The company presents itself as a relatively recent initiative in the sake landscape, with strong international collaborations and a premium positioning.
