The vineyards of Tenuta Campioli are cultivated in a hilly position with north-east exposure, at an altitude of 350m above sea level, with inter-rows of legumes alternating with spontaneous grassing, on medium-textured soil. The grapes used are 100% Biancame or Bianchello, grown in certified organic farming.
The harvest is done manually and the bunches placed in boxes of two quintals, with cooling before the soft pressing in an inert atmosphere and cold static decantation. Maturation lasts 5 months and is carried out in concrete tanks.
It shows a crystalline, intense yellow color. The olfactory sensations are mostly floral, of yellow rose and linden, with orange blossom and mimosa flowers, followed by citrus aromas of grapefruit and bergamot, then fruity notes of pineapple and medlar, with an aromatic finish of marjoram and sage. The taste is decidedly full, pleasantly fresh and savory, with a good persistent aromatic finish, with citrus hints of cedar.
Perfect in combination with octopus and potatoes, salmon tartare, scottadito sardines and paccheri with cod; to try with white truffle tagliatelle.
