The Famoso del Convento is made with 100% Famoso grapes, an autochthonous vine whose bunches, carefully selected during the harvest, are sorted on the selection tables, vacuum-packed, cleaned of the must by flotation and fermented at a very low temperature 13°C with yeasts selected. The whole process is carried out in a reduced environment to avoid any oxidative phenomena. It matures in stainless steel tanks for 6 months, then it is bottled with cold sterilization and inert saturation of the head space. Before being put on the market, it is aged for a further 2 months in the bottle.
When poured, it shows a straw yellow color with green and golden yellow reflections. Intense fruity aromas arrive on the nose that tend almost to aromatic, the nuances of yellow flowers, tropical fruits, banana and yellow apple stand out. The sip is harmonious and sapid, with an important acidity and pleasantness, along the finish.
Perfect as an aperitif, it is also recommended to be paired with cold or cooked seafood appetizers, even in combination with fresh cheeses and white meats, it is able to satisfy the palate. Given the great aroma, it also proves to be a goblet for conversation between meals.
