Stephane Regnault's Champagne Blanc de Blancs Mixolydien n°99 Extra Brut Grand Cru is a true celebration of the extraordinary qualities of the Chardonnay grape variety. Produced exclusively with Grand Cru grapes from the best vineyards of the Côte des Blancs, this champagne stands out for its freshness and complexity. In appearance, it shows a golden color with greenish reflections and a fine, persistent perlage.
On the nose, it opens with a fragrant and enveloping bouquet, characterized by notes of citrus, white flowers, and a slight hint of white-fleshed fruit such as green apple and pear. On the palate, it confirms its elegance and precision, offering a velvety and creamy sensation, balanced by a marked acidity that gives freshness and vitality. The finish is long and mineral, with an aftertaste recalling toasted almonds and freshly baked bread.
Stephane Regnault's careful winemaking process, combined with a minimum of four years of aging on the lees, guarantees a complexity and depth that make it perfect both for special occasions and everyday enjoyment. To be served between 8 and 10 degrees Celsius, it can be paired with fish dishes, carpaccios, and fresh cheeses, enhancing every flavor to the fullest.
