The vineyards Pinot Noir and Chardonnay are grown in the municipalities of Torricella Verzate and Oliva Gessi, on the foothills facing South-East, on calcareous-clayey soil. After harvesting, the rosé vinification provides for the Pinot Noir to be destemmed and left to cold macerate on the skins for about 12 hours; follows soft pressing of the whole berry for a rosé must that is fermented at a controlled temperature. After subsequent decanting and stabilization, selected yeasts and sweet must are added; the base referments in an autoclave acquiring the classic sparkling character.
In the glass it shows a clear and brilliant rosé colour. A pleasantly inebriating and persistent olfactory profile punctuated by a fresh fruitiness among which delicious aromas of currant and rose stand out. Gives the taste a soft sip, but also sapid and harmonious, with the right freshness, appetizing and lively.
A fresh rosé, excellent to accompany all fish dishes generally based but also ideal to be combined with the typical Italian antipasto based on mixed salami.
