Mezcal Coyote 70cl - Tio Pesca is born in the heart of Mexico, from a rigorous selection of mature agaves grown in the volcanic soils of the state of Oaxaca. This artisanal drink represents the traditional essence of mezcal, extracted from espadín agave, which is cooked in underground ovens to give the distillate a characteristic smoky aroma. The aging, short and in glass, preserves the intensity of the aromas with peaty notes, damp earth, and spicy nuances. On the nose, one perceives scents of agave juice, ash, and a delicate almond-like sweetness that envelops the palate with a balance between robustness and finesse. This mezcal pairs perfectly with grilled meat dishes, aged cheeses, and the spicy flavors typical of Mexican cuisine, capable of enhancing its olfactory and gustatory complexity.
