The grapes of Mcountries Thurgau are harvested when they are perfectly ripe, around the second week of September. In the cellar the grapes undergo a soft pressing, natural cold settling and partial fermentation of the sugars. In this way a base wine is obtained which is placed in vacuum-packed steel vats at a low temperature; at a later time it is transferred to an autoclave, where a second and slow fermentation takes place for the second fermentation. All this lasts about two months, then passes into the bottle with sterile and isobaric filtration, to maintain the lively effervescence acquired through refermentation.

It has a white and lively foam, with a pale gold-green color. Intense aromatic aromas arrive on the nose, where the floral and fruity aromas of apricot, apple and peach prevail. The sip is lively but soft, light, fragrant and fresh.

It is recommended to taste it as an aperitif or in combination with ham and fresh cheeses, perfect with all light foods based on vegetables, fish or meat.
