The Novebolle Rosé Romagna DOC by Bolè represents an excellent choice for those seeking a sparkling rosé wine that best expresses the freshness and liveliness typical of the Romagna territory. This wine stands out for its bright pink color, with reflections ranging from coral to raspberry, and fine and persistent bubbles, a symbol of good winemaking and maturation.

Produced primarily from Sangiovese grapes, the Novebolle Rosé combines the winemaking tradition of Romagna with modern sparkling techniques, following the Charmat method. This method allows for the preservation of the fruit's primary aromas, resulting in a fresh, aromatic, and pleasantly sparkling wine.

On the nose, the Novebolle Rosé opens with lively notes of fresh red fruits such as strawberries, raspberries, and a slight touch of pomegranate. These fruity sensations are accompanied by floral nuances and a light note of toasted bread, due to the brief maturation on the lees.

On the palate, the wine proves to be well-balanced with good acidity that enhances its freshness and sustains its lively and inviting character. The delicate bubbles caress the palate, leaving a creamy sensation that leads to a persistent and pleasantly clean finish.

Ideal as an aperitif, the Novebolle Rosé also pairs magnificently with light appetizers, fish dishes, or sushi, making it versatile for different gastronomic pairings. Perfect for celebrating special occasions or adding a touch of elegance to everyday moments, it is a choice that never disappoints wine lovers.
