Pignoletto Colle Belvedere takes its name in honor of the hills that host the estate's vineyards. The vineyards have been recently renovated respecting tradition but also with an eye to the future.
An excellent sparkling white wine that comes from 100% Pignoletto grapes, vinified by soft pressing and fermentation at a controlled temperature of 16° C. The refermentation is carried out in an autoclave, always at a controlled temperature of 15-16° with selected yeasts; we then proceed with another short period of aging on the lees.
In the glass it has a straw yellow color with greenish reflections and a fine perlage. On the nose there are immediate floral aromas of lily of the valley and jasmine, which blend with fruity aromas of grapefruit and a hint of basil on the finish. On the palate the taste is fresh and young, with notes of citrus and almond.
Perfect as an aperitif, it goes beautifully with gnocchi with butter and sage, excellent with spaghetti with tomato and basil and raw cuttlefish tagliatelle.
