A sparkling wine produced in Emilia Romagna, in the Bologna hills, from grapes from Grechetto Gentile vines.
The vinification takes place through a soft pressing of intact or destemmed bunches at a controlled temperature, with decanting of the must and fermentation at low temperature, and resting for a limited period on its lees. Refermentation (prise de mousse) in “cuves closes” for about 3 months.
In the glass it shows a beautiful light straw yellow color; the taste is dry, decidedly harmonious and pleasantly fresh, when poured the perlage is fine and persistent.
Perfect as an aperitif; excellent with seafood in general, in particular it goes perfectly with shellfish, appetizers and raw fish.
