Pignoletto Vivace DOC - Vallona 2021

The Vallona vineyards expand into the most suitable area of the Colli Bolognesi; the Pignoletto in particular comes from the "historic" plants of Fagnano, in the middle of the hill. The lands are at an altitude of about 300m above sea level, basically loose, with an exposure sheltered from the scorching sun in the month of August, to preserve the characteristic greenish color of the grapes. The vinification is carried out in white, followed by the incomplete alcoholic fermentation, the basis for the subsequent refermentations in an autoclave without the addition of concentrated must, without malolactic fermentation. Aged 10 months in steel; a young wine to be consumed in a short time, one of its characteristics is in fact that the wine is bottled during the year in small batches, every 2 months.
It has a beautiful light straw yellow color, which sometimes turns greenish. The olfactory profile includes clear fruity scents that bring back the starting grape and apricot, amalgamated with limoncella notes and hints of freshly cut hay. The sip is silky, round and full of panache, with a balanced sparkling that gives elegance and pleasantness to the taste.
Excellent as an aperitif and perfect with seafood first and second courses.
