The vinification of the Pinot Noir at Pilzer’s winery follows a strict protocol to preserve all the aromatic and taste nuances that characterize this grape variety. The fermentation takes place under strict thermal control to enhance the delicate and complex aromatic profiles. Afterwards, the wine ages for several months in wooden barrels, during which it gains structure and complexity without losing its initial freshness.
Visually, Pilzer’s Pinot Noir presents a delicate ruby red color with garnet highlights that reveal its evolution over time. The bouquet is enchanting with a range of fragrances from notes of ripe red fruits like cherries and raspberries to more evolved nuances of forest soil and sweet spices, imparted by the aging in wood.
On the palate, the wine is distinctly balanced with a lively acidity that carries forward complex flavors of fruit and a slightly toasted background. The texture is silky and the entry smooth, leading to a persistent finish that leaves room for long and enjoyable aromatic reflections.
