La vendemmia viene fatta a mano, le uve vengono separate dal raspo, poi lasciate fermentare e quindi macerare per circa 15 giorni; dopo la svinatura, il vino viene fatto maturare per 12 mesi in botticelle di rovere, poi per 3 mesi in bottiglia.

Colore rosso non molto intenso, ha profumo di lampone da giovane e si affina con l’invecchiamento assumendo caratteristiche aristocratiche.

Adatto per piatti etnici della cucina cinese con zenzero e pepe di Sichuan, piatti della cucina indiana ricca di spezie, piatti con peperoncino e salumi stagionati.
