After manual harvesting in August, winemaking involves fermentation with maceration at controlled temperatures of 22-24°C for a period of 10 days, a process that favors the optimal extraction of the fruit's characteristics. At the end of fermentation, the wine rests on fine lees for at least 6 months in steel tanks, allowing balanced maturation.

The wine has a ruby ​​red color with violet reflections. On the nose, hints of black cherry, cherry, plum and dark chocolate emerge, intertwining harmoniously. A touch of black pepper adds a spicy note.

The taste is warm, round and with a solid structure, with a perfectly blended tannic vein. The finish is characterized by liquorice tones, giving the wine a note of elegance and persistence.

This wine pairs beautifully with grilled meats, game and mature cheeses.
