Raicilla Maguey Abel Benitez represents a refined artisanal expression of the traditional distillates from the south of Jalisco, Mexico, a region renowned for the cultivation of wild agaves and the production of native liquors. Made exclusively with Maguey agave, this raicilla authentically expresses the rustic and complex character of this particular vine, less known compared to the more common blue agave used in tequila.
The production method involves cooking the piñas in traditional underground ovens and spontaneous fermentation in wooden vats, followed by double distillation in copper or ceramic stills, which impart delicate smoky notes and an aromatic profile rich in wild herbs, citrus, and hints of damp earth. The aging, although brief, softens and integrates the components, giving an elegant and vibrant balance.
